Ingredients
- 8 Medium baking potatoes
- 2 cups shredded sharp Cheddar
- 2 cups whipping cream
- 1 teaspoon salt
- ¼ cup soft breadcrumbs
- ¼ cup melted butter
Directions
- In a large pot cover potatoes with water and bring to a boil.
- Cover, reduce heat and simmer 10 minutes.
- Drain and cool, then peel and coarsely shred.
- Alternate 2 layers of potatoes and cheese in a lightly greased 9x13 dish.
- Combine whipping cream and salt; pour over potatoes.
- Sprinkle with breadcrumbs, and drizzle with butter.
- Bake at 350º for 45 minutes.
