Shredded Potatoes Au Gratin

  1. In a large pot cover potatoes with water and bring to a boil.
  2. Cover, reduce heat and simmer 10 minutes.
  3. Drain and cool, then peel and coarsely shred.
  4. Alternate 2 layers of potatoes and cheese in a lightly greased 9x13 dish.
  5. Combine whipping cream and salt; pour over potatoes.
  6. Sprinkle with breadcrumbs, and drizzle with butter.
  7. Bake at 350º for 45 minutes.
